This is the perfect idea for a quick dinner for two. I love different pasta dishes because there so many to choose from. Each pasta has a different texture and taste. Try this one.

SAUSAGE AND TOMATO RIGATONI

 

 

INGREDIENTS:

4 cups rigatoni pasta (8 oz.) uncooked

1 lb. Italian sausage, cut into chunks

1 ea. Red onion, sliced

¼ cup tomato paste

¼ cup Sun-Dried Tomato Dressing

¼ cup fresh parsley, shopped

¼ cup grated parmesan cheese

 

DIRECTIONS:

1.     Cook pasta as directed on package

2.      Brown sausage in a large non- stick skillet; drain. Stir in onions and tomato paste; cover. Cook 15 min. or until onions and sausage is done. Stirring add dressing.

3.      Toss sausage mixture with pasta. Sprinkle with parsley and cheese.
