I am always looking for a different way to cook Catfish. This easy recipe is in my new book.

CATFISH WITH APPLE, BACON VINAIGRETTE

 

INGREDIENTS:

3 tbsp. Sherry vinegar

1 tbsp. Dijon mustard

2 ea. Shallots, minced

4 oz. bacon, chopped

¼ cup olive oil

8 large Swiss Chard leaves, chopped

1 ea. Granny Smith apple, sliced

Salt and pepper to taste

4 ea. Catfish fillets, 6 oz. each

2 tbsp. butter

Juice of 2 lemons

 

DIRECTIONS:

1.     Whisk together the vinegar, Dijon, and 1 minced shallot

2.      Heat a pan on medium and cook the bacon until crispy. Mix the bacon and drippings into the vinegar, along with 3 tbsp. olive oil

3.      Heat a little oil in a nonstick skillet on medium. Add the chard and the other shallot; cook until chard wilts, about 5 min. Add the apple; season with salt. Move chard to a side plate.

4.      Wipe out pan and add a little oil. Season the catfish and sear them until golden brown on both sides.

5.      Remove them; add 1 tbsp. butter, ½ cup water, half the lemon juice to pan. Simmer until sauce thickens. Combine chard, vinaigrette, and sauce.

6.      Pour over fish

Note: Rice is suggested to serve.
